This is one of my favorite quotes, from “The Immune System Recovery Plan”, written by Dr. Susan Blum, MD. I began to truly understand the profound impact that food had on our health when I started my family on a food elimination diet to determine how certain foods affected each of us individually. It was one of the most impactful choices we’ve ever made and this simple step radically improved our health.
It’s no secret that certain foods can cause inflammation, which in turn can cause symptoms of joint pain, headaches, stomach problems, fog brain, and fatigue. What we didn’t realize was that these inflammatory symptoms were the same as what we thought were residual Chronic Lyme Disease symptoms. When we eliminated processed foods and got back to a whole foods, plant based diet we began to see a transformation in our health. What we thought was Chronic Lyme Disease was actually an autoimmune condition based on years of antibiotic therapy and toxic overload from inflammatory foods.
Changing the food you eat, based on how it affects your body, is a powerful lifestyle change to heal your immune system and help you get back to feeling great again. It is critical to figure out which foods are best for your individual body chemistry and to eliminate any foods that are causing inflammation.
The process is fairly simple once you commit to it. It’s all about removing inflammatory foods from your diet and eating more unprocessed, plant based, whole foods to improve immune system function and balance. Once you’ve completed this process, you will know whether gluten, dairy, corn, or soy is creating an immune reaction in your body by causing either familiar or new symptoms when you ate them again.
